Delicious and nutritious chargrilled chicken salad packed with protein and fiber.
Ingredients:
  • 2 large (about 500g) single chicken breast fillets
  • 2.50 gm ground cinnamon
  • 80ml (1/3 cup) fresh orange juice
  • 14.40 gm honey
  • 9.20 gm olive oil
  • 2 bunches asparagus, woody ends trimmed, halved diagonally
  • 150g baby green beans, topped
  • 2 tsp white wine vinegar
  • 1 x 400g can butter beans, rinsed, drained
  • 1 orange, segmented
  • 82.50 ml fresh continental parsley leaves
Instructions:
  • Place the chicken in a glass dish. Mix cinnamon, half of the orange juice, honey, and oil in a jug. Drizzle over the chicken and ensure it's well coated. Cover and refrigerate for 15 minutes to marinate.
  • Blanch the asparagus and green beans in boiling salted water for 2 minutes until vibrant green and slightly crisp. Shock in cold water, then drain.
  • Preheat a high-heat chargrill. Grill the chicken for 3-4 minutes on each side until perfectly cooked. Rest on a plate for 5 minutes, then thinly slice across the grain. Enjoy!
  • In a jug, combine the vinegar with the remaining orange juice, honey, and oil. Whisk until well blended, then season with pepper to taste.
  • Combine asparagus, green beans, butter beans, orange, and parsley in a bowl. Divide the salad among serving plates, top with chicken, and drizzle with dressing before serving.
