Whip up a delicious grilled chicken and papaya salad with just a handful of fresh ingredients.
Ingredients:
  • Olive oil spray
  • 4 corn-fed skinless chicken breast fillets
  • 100g pkt baby watercress salad
  • 600g red papaya, deseeded, peeled, thinly sliced
  • 1 yellow capsicum, deseeded, sliced
  • 110ml container balsamic dressing
Instructions:
  • Prepare a chargrill pan with a light coating of oil. Heat the pan over medium-high heat. Grill the chicken for 4-5 minutes on each side or until fully cooked. Rest the chicken for 5 minutes before slicing.
  • Mix the watercress salad, papaya, and capsicum in a bowl, then plate the salad mixture onto individual serving plates.
  • Serve the salad with the chicken on top and a generous drizzle of dressing.
