Create a flavorful Asian chicken dish showcasing fresh seasonal fruit.
Ingredients:
  • 4 (about 170g each) chicken breasts, skin on
  • 1 lime, zested
  • 40ml (2 tbsp) olive oil
  • 40.00 ml crushed garlic
  • 5 limes, juiced
  • 60ml (1/4 cup) sweet chilli sauce
  • 20ml (1 tbsp) fish sauce
  • 20ml (1 tbsp) mirin*
  • 20ml (1 tbsp) grated palm* or brown sugar
  • 10ml (2 tsp) sesame oil
  • 125ml (1/2 cup) peanut oil
  • 250.00 ml mizuna leaves
  • 2 kiwi fruit, peeled, sliced
  • 1 small papaya, peeled, thinly sliced
  • 1 star fruit, sliced
  • 1 tomato, seeded, sliced
Instructions:
  • In a glass bowl, combine chicken breasts, lime zest, olive oil, and half of the garlic. Mix well to coat the chicken, then cover and refrigerate for 30 minutes.
  • In a small bowl, mix lime juice, sweet chili sauce, fish sauce, mirin, palm sugar, and the rest of the garlic. Pour in the oils and whisk until fully blended. Set aside for later use.
  • Preheat a chargrill pan or barbecue until it's hot. Grill the chicken for 4-5 minutes on each side until it's golden brown and fully cooked. Let it cool for a bit, then slice each chicken breast into three pieces.
  • On four plates, elegantly arrange the vibrant mizuna leaves, tender sliced chicken breast, and the colorful assortment of fruit and tomato.
  • Drizzle dressing generously over the dish and season to taste. (Any remaining dressing can be stored in the refrigerator for up to two weeks.)
