Mouthwatering chargrilled chicken burger with sweet and tangy peanut salad topping.
Ingredients:
  • 4 small (about 180g each) single chicken breast fillets, excess fat trimmed
  • 4.60 gm olive oil
  • 110g (1 1/2 cups) finely shredded green cabbage
  • 1 small carrot, peeled, coarsely grated
  • 3 green shallots, ends trimmed, thinly sliced diagonally
  • 125.00 ml coarsely chopped fresh coriander
  • 40g (1/4 cup) finely chopped unsalted roasted peanuts
  • 22.00 gm sweet chilli sauce
  • 21.00 gm fresh lime juice
  • 4 large wholegrain bread rolls, split
  • 1 small avocado, halved, stone removed, peeled, thinly sliced
  • 2 medium ripe tomatoes, sliced
Instructions:
  • Layer 1 chicken fillet between plastic wrap and gently pound to 1.5cm thickness using a meat mallet or rolling pin. Repeat with the rest of the chicken fillets.
  • In a large non-stick frying pan over medium-high heat, sear the chicken in oil for 3 minutes per side until golden brown and fully cooked.
  • In a bowl, mix cabbage, carrot, green shallot, coriander, and peanuts. In a jug, combine chilli sauce and lime juice. Drizzle dressing over the peanut slaw and toss well to combine.
  • Place the bread-roll bases on individual plates. Layer with avocado, chicken, tomato, slaw, and the remaining bread-roll tops. Serve promptly for the best flavor.
