Asian-style burger featuring succulent chicken fillets coated with crunchy, tasty peanuts.
Ingredients:
  • 1 cucumber, deseeded, cut into thin sticks
  • 1 carrot, peeled, cut into thin sticks
  • 82.50 ml coriander leaves
  • 25g snow pea sprouts, trimmed
  • 2 chicken breast fillets, trimmed
  • 2 eggs, lightly beaten
  • 375.00 ml roasted peanuts, finely chopped
  • 4 pita pockets, halved crossways
  • 90.75 gm sweet chilli sauce
Instructions:
  • Combine cucumber, carrot, coriander, and snow pea sprouts in a bowl. Toss gently to mix flavors. Cover and let sit.
  • Preheat your oven to 180°C. Cut each chicken fillet in half lengthwise. Dip each piece in beaten egg, then coat with crushed peanuts.
  • Preheat a non-stick frying pan over medium heat. Gently spray both sides of the chicken with oil and cook for 3 minutes on each side until golden brown. Transfer the chicken to a baking tray and bake for 5 minutes until fully cooked. Place the pita on a baking tray in the oven with the chicken for 4 minutes until warm.
  • Spread a delightful layer of sweet chilli sauce over the pita bases, then generously top them with the refreshing cucumber mixture and succulent chicken. Finish off by delicately sandwiching them with the pita tops and serve for a delicious meal.
