Elevate your chicken with a crispy, flavorful peanut crust.
Ingredients:
  • Asian greens, to serve
  • 125.00 ml chopped unsalted roasted peanuts
  • 2.40 gm sea salt
  • 5.00 gm mild curry powder
  • 600g chicken tenderloins
  • 36.40 gm peanut oil
  • 1 medium brown onion, finely chopped
  • 1 garlic clove, crushed
  • 85.80 gm smooth peanut butter
  • 270ml lite coconut milk
  • 20.00 ml kecap manis
  • 8.00 gm brown sugar
  • 21.00 gm lime juice
  • Steamed white rice, to serve
Instructions:
  • Blend nuts, salt, and curry powder until finely crumbed. Coat chicken with peanut mixture.
  • In a frying pan over medium-low heat, heat half of the oil. Cook chicken in 2 batches for 5 minutes on each side until golden brown and fully cooked. Transfer to a plate and cover to keep warm.
  • Heat the remaining oil in a saucepan over medium heat. Sauté onion and garlic for 3 minutes until softened, stirring occasionally.
  • Combine peanut butter, coconut milk, kecap manis, sugar, and lime juice until smooth. Simmer mixture for 5 minutes, stirring occasionally. Serve with chicken, rice, and greens.
