Prepare ahead these festive chicken parcels. Stuff and wrap chicken a day in advance. Sprinkle with paprika, bake for a sweet and sticky finish. Enjoy cranberry and pistachio stuffing for a Christmas twist. Get creative with food blankets - try prawn pigs in blankets or sugar-crusted chicken wraps. The options are endless!
Ingredients:
  • 55g (1/4 cup, firmly packed) brown sugar
  • 2.50 gm sweet paprika
  • 6 chicken breast fillets
  • 12 streaky bacon rashers
  • 25g (1/2 cup) panko breadcrumbs
  • 40g (1/4 cup) dried cranberries, coarsely chopped
  • 40g (1/4 cup) whole pistachio kernels, coarsely chopped
  • 62.50 ml chopped fresh continental parsley leaves
  • 40.00 ml chopped fresh sage leaves
  • 50g butter, melted
Instructions:
  • Preheat your oven to 200C/180C fan forced. Line a baking tray with baking paper, then mix the brown sugar and paprika in a small bowl.
  • Mix the breadcrumbs, cranberries, pistachios, parsley, sage, and melted butter in a bowl until fully incorporated.
  • With a small sharp knife, carefully make a deep horizontal slit in each chicken breast to form a pocket without cutting all the way through. Stuff with cranberry mixture.
  • Individually wrap each chicken breast with 2 strips of bacon and arrange on the lined tray. Sprinkle the sugar mixture over the tops of the parcels. Bake for 30 minutes or until the chicken is fully cooked. Serve hot.
