Festive blondies with raisins and almonds: a delightful sweet treat.
Ingredients:
  • 125g butter, chopped
  • 400g white chocolate, chopped
  • 215g (1 cup) caster sugar
  • 3 eggs, lightly beaten
  • 8.80 gm vanilla extract
  • 150g (1 cup) self-raising flour
  • 75g (½ cup) plain flour
  • 80g (2/3 cup) almond meal
  • 235g (1 1/3 cups) Raisins
  • 50g (1/3 cup) Slivered Almonds
  • Icing sugar, to serve
Instructions:
  • Preheat your oven to 180°C/160°C fan forced. Grease a 20 x 30cm slab pan with a 3cm depth and line with overhanging baking paper on two long sides.
  • In a saucepan over medium-low heat, melt and smooth out the butter with 300g of chocolate. Once smooth, take it off the heat and mix in the sugar. Let it cool for 10 minutes, then add the eggs and vanilla. Sift the flours over the mixture, add almond meal, and mix until fully combined.
  • Roughly chop the leftover chocolate and mix in with the raisins. Stir well to combine. Pour the mixture into the pan and level the top. Sprinkle with almonds. Bake the blondie for 35-40 minutes; cover with foil for the last 20 minutes to avoid excessive browning. Test for doneness with a skewer; it should come out clean. The blondie should have a slight softness. Let it cool completely on a wire rack in the pan.
  • Remove the chilled blondie from the pan, sprinkle with powdered sugar, and slice into squares.
