Elevate your day with a vibrant, nutritious chicken burger crowned with a flavorful salsa.
Ingredients:
  • 500g chicken breast
  • 9.20 gm rice bran oil
  • 2.50 gm Portuguese chicken seasoning
  • 1/2 tsp dried oregano
  • 1 garlic clove, crushed
  • 1/2 medium avocado, diced
  • 125g can corn kernels, drained
  • 1 small red capsicum, diced
  • 10.60 gm lemon juice
  • 4 wholemeal bread rolls, split, toasted
  • 61.88 gm reduced-fat mayonnaise
  • 250.00 ml mixed salad leaves
Instructions:
  • Cut each chicken breast in half lengthwise. Place the chicken breast pieces between 2 sheets of parchment paper. Use a meat mallet to pound the chicken until it is 1cm thick. In a glass or ceramic bowl, combine oil, seasoning, oregano, and garlic. Add the chicken and toss to coat. Cover and refrigerate until ready to use.
  • Combine avocado, corn, capsicum, and lemon juice in a bowl. Gently toss ingredients together, then cover and set aside.
  • Preheat a large non-stick frying pan over medium-high heat. Cook chicken in two batches for 3-4 minutes on each side or until fully cooked. Transfer to a plate and cover with foil to keep warm.
  • Spread mayonnaise on the base of each bread roll, add salad leaves, chicken breast, and avocado mixture, then place the roll tops on top. Serve.
