Quick and easy family favorite: crispy chicken schnitzel on a soft dinner roll, ready in 30 minutes.
Ingredients:
  • 310g can corn kernels, drained
  • 1 long red chilli, seeded, finely chopped
  • 1/2 small red onion, finely chopped
  • 20.00 ml coriander, finely chopped
  • 31.50 gm lime juice
  • Salt and pepper
  • Canola oil, to shallow-fry
  • 600g chicken schnitzel
  • 150g mayonnaise
  • 4 Kaiser Rolls, split
  • 1 avocado, stoned, peeled, mashed
  • 50g rocket leaves
  • Lime wedges, to serve
Instructions:
  • In a bowl, combine corn, chilli, onion, and coriander. Drizzle 2 teaspoons of lime juice, toss well to mix. Season with salt and pepper to taste.
  • Pour a generous amount of oil into a large frying pan to completely cover the base. Heat it over medium heat. Cook the schnitzels in batches for 4-5 minutes per side or until they are golden brown and fully cooked. Place them on a plate lined with paper towel to absorb excess oil, then slice each schnitzel in half crossways.
  • Combine mayonnaise, garlic, and remaining lime juice in a bowl. Season with salt and pepper to taste.
  • Spread avocado on the bottom half of the rolls, add schnitzel, corn salsa, rocket, drizzle with aioli, and cover with the remaining roll halves.
