Chicken katsu burritos recipe

Upgrade your dinner for two by swapping burger patties for chicken schnitzels or nuggets. Bake and slice to perfection.
Ingredients:
  • 400g packet crumbed chicken burger patties
  • 8 mini flour tortillas
  • 350g coleslaw mix
  • 42.00 gm fresh lime juice
  • 1 large avocado, sliced
  • Tonkatsu sauce, to serve
  • Kewpie mayonnaise, to serve
  • Fresh coriander leaves, to serve
Instructions:
  • - Preheat oven to 220°C/200°C fan forced. - Place chicken burger patties on a baking tray and bake for 15 minutes, turning halfway through, until cooked through. - Slice each burger patty into 8 pieces and enjoy!
  • Heat a non-stick frying pan over medium-high heat, then spray with oil. Cook the tortillas for about 30 seconds on each side until golden. Transfer to a plate and cover with a tea towel. In a bowl, mix the coleslaw mix and lime juice, excluding the dressing sachet for another occasion.
  • Lay slaw on tortillas followed by burger slices, avocado, tonkatsu sauce, and Kewpie mayonnaise. Finish with a sprinkle of coriander before serving.
