Tangy lemon and smoky paprika elevate these healthy burgers.
Ingredients:
  • 5.00 gm sweet paprika
  • 60ml (1/4 cup) fresh lemon juice
  • 2 (about 200g each) single chicken breast fillets, halved lengthways
  • 1 x 250g punnet cherry tomatoes, quartered
  • 4 shallots, pale section only, ends trimmed, thinly sliced
  • 40.00 ml chopped fresh coriander
  • 1 long fresh red chilli, deseeded, thinly sliced
  • Olive oil spray
  • 4 wholemeal buns, split
  • Lettuce leaves, to serve
  • 90g (1/3 cup) low-fat natural yoghurt, to serve
Instructions:
  • Combine fragrant paprika and zesty lemon juice in a dish. Add chicken, ensuring it is evenly coated. Cover and refrigerate for 30 minutes to allow the flavors to meld.
  • In a bowl, combine the tomato, shallot, coriander, and chili. Mix in the rest of the lemon juice and season with pepper.
  • Preheat a chargrill or non-stick frying pan over high heat and spray with olive oil. Cook the chicken for 2 minutes on each side until done.
  • Place the bun bases on serving plates. Layer lettuce, chicken, and tomato mixture on top. Add the remaining bun halves and serve with a side of yogurt.
