Flavorful Cajun burger with creamy avocado salsa, a must-try healthy dish for any night of the week.
Ingredients:
  • 2 chicken breast fillets
  • 32.50 gm cajun seasoning (see notes)
  • 4 crusty wholemeal bread rolls, split, toasted
  • 1 medium avocado, cut into 1cm pieces
  • 40.00 ml roughly chopped fresh coriander leaves
  • 21.00 gm lime juice
  • 60g baby mesclun salad leaves
Instructions:
  • Slice the chicken breast fillets in half horizontally to create 4 thin fillets. Place them in a shallow glass or ceramic dish, season both sides, and drizzle with 2 teaspoons of oil. Massage the seasoning to coat the chicken, cover, and refrigerate overnight if possible.
  • In a large non-stick pan, sizzle chicken in remaining oil over medium-high heat until fully cooked, about 2 to 3 minutes per side. Place on a clean board and slice each fillet in half diagonally.
  • 1. Assemble roll bases on plates. Mix avocado, coriander, and lime juice in a bowl. Layer roll bases with salad leaves, tomato, chicken, and avocado mix. Garnish with coriander leaves and place roll tops. Serve.
