Cajun Chicken

Spicy pan-fried chicken with a crispy crust, ideal for pairing with veggies or serving on a bun.
Ingredients:
  • 4 boneless skinless chicken breast halves (1 1/4 pounds)
  • 1 1/2 cups Country® Corn Flakes cereal
  • 1/2 cup Original Bisquick™ Baking Mix
  • 2 teaspoons Cajun seasoning
  • 1/2 cup water
  • 2 tablespoons butter or margarine
Instructions:
  • Pound each chicken breast half to 1/4-inch thickness between sheets of waxed paper or plastic wrap.
  • Crush the cereal and combine it with Bisquick and Cajun seasoning. Dip the chicken into water and then coat it with the cereal mixture.
  • In a 12-inch nonstick skillet over medium heat, melt butter. Cook chicken in the butter for 8 to 10 minutes, turning once, until the thickest pieces are no longer pink and the juices run clear.
