Cajun chicken pieces

Grill delicious RSPCA approved chicken for a fresh family meal on the barbecue.
Ingredients:
  • 32.50 gm Cajun seasoning
  • 36.40 gm olive oil
  • 600g chicken drumstick
  • 500g chicken wing
  • 25g butter, melted
  • 40.00 ml coriander leaves, finely chopped
  • 2 corn cobs, halved
  • 500g baby potatoes, cut into 1cm slices spray olive oil
  • coriander sprigs, to serve
  • 120g baby spinach
  • 4 radishes, thinly sliced
  • 1 Lebanese cucumber, sliced
  • 64.38 gm French dressing
Instructions:
  • Mix together seasoning and oil in a small bowl. Season the chicken with the mixture and place it in a large glass dish or a large sealable plastic bag. Pour the marinade over the chicken and toss to coat. Refrigerate for 1 hour before cooking.
  • Preheat a generously oiled non-stick frying pan or flat barbecue plate over medium-high heat. Brown and cook chicken, turning frequently, for 20-25 minutes until fully cooked.
  • Combine butter and fragrant coriander in a small bowl. Season generously. Preheat a lightly oiled barbecue grill or chargrill to medium-high heat. Brush the corn with the flavorful butter mixture. Cook on the grill for 10-12 minutes until tender and slightly charred. Transfer to a platter. Lightly spray potato slices with oil and grill for 10-12 minutes until tender.
  • In a bowl, toss together fresh spinach, sliced radish, and diced cucumber. Finish with a generous drizzle of your favorite dressing.
  • Arrange the chicken alongside corn, potatoes, a fresh salad, and garnish with fragrant coriander sprigs.
