Cajun Chicken Fettuccine

Spicy Cajun rotisserie chicken with colorful veggies makes a quick and delicious dinner.
Ingredients:
  • 3 cups water
  • 1 box Chicken Helper™ fettuccine Alfredo
  • 1 tablespoon margarine or butter
  • 2 cups sliced fresh mushrooms
  • 1 small onion, cut into thin strips
  • 1 medium green or red bell pepper, cut into thin bite-size strips
  • 2 1/2 cups milk
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • 1/4 to 1/2 teaspoon ground red pepper (cayenne)
  • 3/4 cup tomato pasta sauce
  • 3 cups cubed deli rotisserie chicken (from 2- to 2 1/2-lb chicken)
Instructions:
  • In a 2-quart saucepan, bring 3 cups of water to a boil. Add the pasta from the Chicken Helper box and bring back to a boil. Lower the heat and simmer uncovered for around 10 minutes, stirring occasionally, until the pasta is tender. Drain the pasta and cover to keep warm.
  • In a large nonstick skillet, melt the margarine over medium-high heat. Add the mushrooms, onion, and bell pepper. Sauté for about 3 minutes, stirring occasionally, until the vegetables are crisp-tender. Transfer the cooked vegetables to a plate.
  • Combine milk, sauce mix (from Chicken Helper box), Italian seasoning, paprika, and ground red pepper in the same skillet. Bring to a boil, stirring occasionally.
  • Lower the heat and simmer uncovered for 6 minutes, stirring occasionally. Add tomato pasta sauce, vegetables, and chicken. Continue cooking uncovered for about 3 more minutes or until everything is heated through. Serve over pasta.
