Grilled chicken burger with caramelized onion, provolone, avocado on toasted bun. Easy, satisfying sandwiches.
Ingredients:
  • 1 ripe avocado, sliced
  • 1 tablespoon lemon juice
  • 1 tablespoon butter
  • 1 large Vidalia onions, sliced into rings
  • 4 boneless, skinless chicken breast halves
  • salt and pepper to taste
  • 4 hamburger buns
  • 4 tablespoons mayonnaise
  • 4 slices provolone cheese
Instructions:
  • In a small bowl, toss sliced avocado with fresh lemon juice and enough water to cover the avocado. Let it sit.
  • Prepare the outdoor grill by preheating it on high heat and lightly greasing the grate.
  • In a large heavy skillet over medium-high heat, cook onions in butter until they are golden brown and caramelized. Remove from skillet and set aside.
  • Season chicken generously with salt and pepper. Grill until cooked through, approximately 5 minutes on each side, until no longer pink and juices run clear. Use an instant-read thermometer to ensure it reaches an internal temperature of at least 165 degrees F (74 degrees C).
  • Toast the buns on the grill until golden brown.
  • Spread buns generously with creamy mayonnaise, then stack with savory chicken, sweet caramelized onions, melty provolone, and creamy avocado.
