Grilled chicken thigh fillets on warm Turkish bread rolls with a delicious filling that will leave everyone wanting seconds!
Ingredients:
  • 4 chicken thigh fillets, trimmed
  • 40.00 ml thyme leaves
  • 1 large lemon, rind finely grated, juiced
  • 4 Turkish bread rolls, split
  • olive oil cooking spray
  • 50g mixed salad greens
  • 1 avocado, halved, sliced
  • 81.68 gm aioli or whole-egg mayonnaise
Instructions:
  • 1. Sandwich chicken between non-stick baking paper. Tenderize until 1cm thin using a meat mallet. 2. Mix thyme, oil, lemon zest, and 1/4 cup lemon juice in a shallow ceramic dish. Season with salt and pepper. 3. Submerge chicken in the marinade, ensuring it's well coated. Cover and chill for 30 minutes, if possible.
  • Preheat the barbecue to medium-high heat. Take the chicken out of the marinade and grill it for 2 to 3 minutes on each side until cooked. While the chicken is cooking, spray the cut side of the rolls with oil and grill for 1 to 2 minutes until golden.
  • Place a bed of fresh salad greens on the bottom halves of the rolls. Layer slices of creamy avocado and tender chicken on top. Drizzle with a generous amount of flavorful aioli. Finally, place the top halves of the rolls on the sandwiches and serve immediately.
