Garlic and lemon thyme roasted chicken - budget-friendly crowd pleaser.
Ingredients:
  • 2 lemons
  • 8 chicken drumsticks
  • 2 small red onions, cut into wedges
  • 36.40 gm olive oil
  • 3 garlic cloves, crushed
  • 40.00 ml fresh lemon thyme
  • 1/4 iceberg lettuce, coarsely shredded
  • 2 zucchini, halved lengthways, thinly sliced
  • 62.50 ml fresh continental parsley leaves
  • 40.00 ml coarsely grated parmesan
  • 42.40 gm bought ranch dressing
Instructions:
  • Preheat your oven to 220°C. Grate the lemon zest finely and squeeze the juice from the lemons. Combine the lemon zest, lemon juice, chicken, onion, olive oil, garlic, and lemon thyme in a large baking dish. Toss everything together, cover with foil, and roast in the oven for 10 minutes.
  • Uncover the chicken, flip it over, and continue roasting for an additional 15 minutes or until the chicken is beautifully golden and fully cooked.
  • Combine lettuce, zucchini, parsley, and parmesan in a bowl. Drizzle with ranch dressing, toss, and serve with the chicken.
