Whip up a mouthwatering Mediterranean roast chicken dish in under an hour for a family-approved meal.
Ingredients:
  • 4 desiree potatoes, thinly sliced
  • 2 tsp finely grated lemon rind
  • 100g feta
  • 40.00 ml chopped fresh oregano leaves
  • 4 chicken drumsticks
  • 4 chicken thigh cutlets
  • 250g truss cherry tomatoes
  • 187.50 ml drained pitted kalamata olives
  • fresh oregano leaves, to serve
Instructions:
  • Preheat your oven to a piping hot 220°C/200°C fan-forced. Arrange potato slices in a spacious roasting dish, ensuring they lie in a single layer. Generously drizzle with oil and season with salt and pepper for exquisite flavor.
  • Mix together lemon zest, lemon juice, feta cheese, and oregano in a bowl. Carefully loosen chicken skin with your fingers. Spoon 2 teaspoons of the mixture under the skin of each piece. Gently rub the chicken to distribute the mixture evenly. Place the chicken on top of the potatoes and roast for 30 minutes.
  • Layer succulent tomatoes and briny olives over plump chicken, generously season with pepper, then roast until chicken is perfectly cooked, about 10 minutes. Garnish with fragrant oregano before serving.
