Lemon-roasted cauliflower and broccoli

Try this quick and healthy high fiber, gluten-free side dish - ready in just 30 minutes.
Ingredients:
  • 600g cauliflower, cut into small florets
  • 400g broccoli, cut into small florets
  • 56.88 gm lemon-infused extra virgin olive oil
  • 62.50 ml pine nuts
  • 280g jar green Sicilian olives, drained
  • 82.50 ml whole fresh flat-leaf parsley leaves
  • 100g feta, crumbled into large pieces
  • Lemon zest, to serve
Instructions:
  • Preheat your oven to 200C/180C fan-forced and line a large baking tray with baking paper.
  • Spread the cauliflower and broccoli on a prepared tray. Drizzle with 2 tablespoons of oil and sprinkle with salt and pepper. Roast for 10 minutes.
  • Add the pine nuts and olives, then roast for an additional 10 minutes or until the vegetables are golden and tender. Drizzle with the remaining oil, toss to combine, and transfer to a platter. Finish by sprinkling with parsley, feta, and zest before serving.
