Roasted cauliflower and broccolini with lemon and pine nuts

Elevate your meal with a healthy roasted veggie medley!
Ingredients:
  • 1 bunch broccolini
  • 400g cauliflower, cut into small florets
  • 4 yellow squash, quartered
  • 2 garlic cloves, thinly sliced
  • 36.40 gm extra virgin olive oil
  • 40.00 ml pine nuts
  • 1 tsp lemon zest
  • 21.00 gm lemon juice
Instructions:
  • Preheat your oven to a toasty 220C/200C fan-forced.
  • Cut broccolini lengthways and crossways, then combine with cauliflower, squash, and garlic in a large roasting pan. Drizzle with oil, season generously with salt and pepper, and toss to mix.
  • Roast for 10 minutes, then add pine nuts and roast for an additional 5 to 7 minutes until vegetables are golden and tender. Finish by sprinkling vegetables with lemon zest, drizzling with juice, and serving.
