Sicilian salmon and cauliflower tray bake recipe

Mediterranean-inspired tray-bake with lemon, roasted cauliflower, and parsley ready in just 30 minutes.
Ingredients:
  • 1 small (about 650g) cauliflower, cut into florets
  • 80ml (1 ⁄3 cup) olive oil
  • 50g (1 ⁄4 cup) raisins
  • 1 ⁄2 small red onion, finely chopped
  • 1 ⁄250.00 ml fresh continental parsley leaves, chopped, plus extra, to serve
  • 40.00 ml drained baby capers
  • 50g packet toasted pine nuts
  • 1 ⁄5.00 gm caster sugar
  • 2 lemons
  • 4 (about 150g each) salmon fillets, skin on
  • Steamed black rice, to serve (optional)
Instructions:
  • 1. Preheat your oven to 210°C (190°C fan-forced) and line a large baking tray with parchment paper. 2. Arrange cauliflower on the tray, drizzle with 1 tablespoon of oil, season, and toss to coat evenly. 3. Roast in the oven for about 15 minutes or until nicely browned.
  • In a small bowl, mix together the raisins, onion, parsley, capers, pine nuts, sugar, juice of 1 lemon, and 2 tablespoons of oil. Season to taste.
  • Flip the cauliflower, then place the salmon on the tray, skin side up. Drizzle with the remaining oil, season, and roast for 8 minutes or until the salmon reaches your desired level of doneness. Top with salsa, extra parsley leaves, and serve with the remaining lemon cut into wedges and black rice, if desired.
