Easy homemade coffee granita made with espresso coffee and sugar syrup, served in glasses with whipped cream.
Ingredients:
  • 0.33333334326744 cup white sugar
  • 1 cup strong espresso coffee
  • 1 cup whipped cream, or to taste
Instructions:
  • In a small saucepan, combine water and sugar and bring to a boil. Simmer until a candy thermometer registers 250 degrees F (120 degrees C), approximately 5 minutes.
  • Take the saucepan off the heat, then mix in the coffee and vanilla. Transfer the mixture to a metal bowl and mix thoroughly. Allow the granita mixture to cool to room temperature, approximately 10 minutes, before freezing it for 1 hour.
  • Continuously mix the granita energetically to smash ice crystals. Repeat the process of freezing and breaking up 4 to 5 additional times, for a total of 2 to 2 1/2 hours.
  • Spoon dollops of whipped cream into 4 short glasses, then distribute the granita mixture evenly among them. Finish by topping each glass with the remaining whipped cream.
