Cool and refreshing watermelon granita - the perfect summer pick-me-up treat.
Ingredients:
  • 4 cups (2 1/2 pounds) seedless watermelon, seedless watermelon
  • 2 tablespoons lemon juice
  • 1/2 cup honey
Instructions:
  • Blend watermelon, lemon juice, and honey until watermelon is fully broken down. This will take about five seconds in a high-powered blender, or 15 seconds in a standard blender.
  • Transfer the mixture to a 9x9 baking dish and let it chill in the freezer without covering.
  • After one hour, scrape the granita with a fork to break up the frozen edges. Return the granita to the freezer.
  • After another hour, retrieve the granita from the freezer and once more scrape it with a fork. You should notice additional parts frozen at this point, creating a slushie-like texture with varied crystal sizes. Return the granita to the freezer.
  • After another hour, scrape the granita once more. The mixture should now be mostly frozen, focus on using the fork to make it fluffier.
  • Once the granita has been in the freezer for four hours, it will be ready to enjoy. It should have a thicker consistency than a slushie, appearing more solid than liquid, with a fluffy texture. Although there will be crystals of varying sizes, the overall appearance will be uniform. Before serving, give it a final fluff/scrape with a fork.
