"Get creative with various melons for a refreshing granita!"
Ingredients:
  • 107.50 gm caster sugar
  • 1.2kg seedless watermelon, rind removed, roughly chopped (see note)
  • 10.60 gm lime juice
Instructions:
  • In a medium heavy-based saucepan, combine sugar and 1 cup of cold water over low heat. Stir for 4 minutes until the sugar is dissolved. Increase the heat to high and add the watermelon. Bring to a boil, then reduce the heat to medium and simmer for 5 minutes. Remove from heat and let it stand for 10 minutes.
  • Transfer the watermelon mixture to a food processor and blend until smooth. Strain the mixture into a large jug to remove solids. Add lime juice and mix well. Pour the mixture into an 18cm x 28cm slice pan and place it in the freezer for 3 hours until partially frozen. Using a fork, break up the ice crystals that are starting to form. Cover the pan with plastic wrap and foil, then return it to the freezer for 4 hours, flaking the mixture every hour until fully frozen. Serve and enjoy!
