Watermelon Granita with Champagne

Champagne and watermelon puree frozen into a sweet and refreshing granita.
Ingredients:
  • 2 pounds watermelon, seeded and cubed
  • 0.5 cup white sugar
  • 1 cup champagne
  • 4 slices watermelon
Instructions:
  • In the pitcher of a blender, combine the cubed watermelon and sugar, blending for 1 minute. Gently mix in the champagne. Transfer the watermelon mixture to a plastic container, cover, and freeze. Every 30 minutes, stir the mixture with a fork until frozen, usually around 2 hours.
  • When ready to serve, take the frozen granita out of the freezer and vigorously stir with a fork or blend in a food processor until it reaches the perfect texture. Serve in tall glasses topped with sliced watermelon for a delightful presentation.
