Impress guests with refreshing melon granitas this summer!
Ingredients:
  • 215.00 gm caster sugar
  • 1.5 kg watermelon
  • 1.5 kg whole rockmelon
  • 1.5 kg whole honeydew melon
  • 20.00 ml mint leaves, chopped
Instructions:
  • In a small saucepan, gently stir together sugar and 1 cup of water over low heat until the sugar is fully dissolved. Increase heat and bring to a gentle boil, then reduce heat and simmer for 1 min. Pour into a wide jug and allow it to cool to room temperature.
  • Peel and deseed the melons, keeping them separate. Roughly chop the flesh, then puree each melon in batches in a food processor until smooth. Strain each batch through a sieve, pressing to extract juice. Discard pulp. Place juices in separate airtight containers. Mix mint with honeydew juice.
  • Divide the sugar syrup between containers, give it a good stir, and pop it in the freezer for around 2 hours, or until it's frozen around the edges. Scrape and fluff it up with a fork, then freeze once more.
  • Chill for 6 hours, stirring and scraping occasionally, then cover and freeze overnight.
  • Use a fork to fluff the mixtures into icy crystals, then layer them in glasses.
