Ingredients:
  • 2 cups raspberries
  • 2 cups strawberries, cut in half
  • 1 cup blueberries
  • 4 1/4 cups sugar
  • 3/4 cup pomegranate juice
  • 1 package (1 3/4 oz) powdered fruit pectin
Instructions:
  • Take a large bowl and crush 2 1/2 cups of berries using a potato masher until slightly chunky. Alternatively, you can pulse them in a food processor. Add sugar and mix thoroughly. Allow the mixture to sit at room temperature for 10 minutes, stirring occasionally.
  • In a small saucepan, combine the juice and pectin until the pectin dissolves completely. Bring the mixture to a vigorous boil while stirring constantly. Boil for 1 minute, stirring continuously. Pour the hot pectin mixture over the berries and stir vigorously until the sugar is fully dissolved, around 3 minutes.
  • Pour the mixture into hot sterilized jars or freezer containers, leaving a 1/2-inch headspace. Cover and allow it to sit at room temperature for about 24 hours until set.
  • To preserve freshness, freeze for up to 12 months or refrigerate for up to 3 weeks. Thaw the frozen jam in the refrigerator and remember to stir before serving.
