Watermelon granita

Ingredients:
  • 1 small watermelon (1.8kg)
  • 60 g stem ginger in syrup
  • 2 limes
  • ½ a bunch of fresh mint (15g)
  • 8 tablespoons natural yoghurt
Instructions:
  • Peel and chop the watermelon flesh, removing seeds. Roughly chop the ginger and combine with the watermelon in a large freezer bag. Add grated lime zest and juice. Freeze until solid. When ready to serve, reserve some baby mint leaves. Blend the frozen watermelon mixture in a food processor to make a pink snow. Serve with yogurt, ginger syrup, and mint leaves. Serve on chilled plates or glasses.
