Cool and invigorating watermelon granita, ideal for scorching summer heat.
Ingredients:
  • 2.5kg piece seedless watermelon, rind removed
  • 220g caster sugar
  • 250ml water
  • 125ml liquid glucose
Instructions:
  • Chill two 20 x 30cm shallow metal trays in the freezer. Juice watermelon flesh using a juicer, then strain the juice through a fine sieve into a bowl.
  • In a small saucepan, combine sugar, water, and liquid glucose. Heat over high heat, stirring until sugar dissolves and mixture boils. Boil for 10 seconds, then remove from heat and let it cool.
  • Combine the sugar syrup with the watermelon juice and pour the mixture into chilled trays. Place trays in the freezer for 4 hours or until partially frozen.
  • With a fork, flake the frozen mixture until it forms small ice flakes. Repeat this process every 2 hours for a total of three times. Flake the mixture one last time just before serving.
  • Serve the mixture in chilled glasses using a spoon.
