Decadent Rocky Road Squares - Irresistibly Addictive!
Ingredients:
  • 200g dark chocolate, chopped
  • 125g unsalted butter, chopped
  • 40g icing sugar mixture
  • 3/4 x 250g packet Granita biscuits, broken into small pieces
  • 30g marshmallow
  • 100g red glace cherries, halved
  • 16.25 gm shredded coconut
Instructions:
  • Prepare a 7cm deep, 19cm square pan by greasing it and lining it with baking paper, leaving a 2cm overhang on all sides.
  • In a saucepan over gentle heat, combine chocolate, butter, and icing sugar. Stir continuously for 8-10 minutes until the mixture is melted and silky. Remove from heat and transfer to a bowl. Allow it to rest for 5 minutes before using.
  • Combine biscuits, marshmallows, cherries, and coconut, then transfer the mixture into the prepared pan. Press the mixture firmly into the pan using the back of a fork. Refrigerate for 4 hours or until set. Cut into pieces before serving.
