Family-friendly herbed bacon pork chops with lemon roasted cauliflower on a single sheet pan.
Ingredients:
  • 2 packages (10 oz each) fresh cauliflower florets (about 5 cups)
  • 3 tablespoons olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon crushed red pepper
  • 8 strips bacon
  • 4 boneless center-cut pork loin chops, 3/4 inch thick (about 1 lb)
  • 1 tablespoon chopped fresh thyme leaves
  • 1/2 teaspoon finely chopped fresh rosemary leaves
  • 1/4 teaspoon black pepper
  • 1 teaspoon finely grated lemon peel
Instructions:
  • Preheat oven to 425°F and generously coat the bottom of an 18x13-inch rimmed sheet pan with cooking spray.
  • Combine cauliflower, 2 tablespoons of fragrant olive oil, a pinch of salt, and a hint of red pepper in a spacious bowl. Evenly spread the seasoned cauliflower on a baking sheet. Roast for 20 minutes, remembering to give it a gentle stir.
  • While waiting, arrange the bacon on a microwave-safe plate, cover it, and microwave on High for 3 to 4 minutes until the edges start to brown but remain soft and flexible.
  • Massage pork chops with the luxurious remaining olive oil, then generously coat them with fragrant thyme, rosemary, and a hint of black pepper. Nestle two irresistible bacon slices over each pork chop, ensuring a perfect fit, and place them on a sheet pan alongside the cauliflower, tucking the bacon ends underneath each chop for a delightful presentation.
  • Bake the pork chop for 9 to 11 minutes until the meat thermometer reads at least 145°F in the center. Before serving, adorn the cauliflower with lemon peel.
