Elevate bacon-wrapped pork tenderloin with fig preserves and balsamic glaze for a gourmet sweet-salty twist, guaranteed to wow guests.
Ingredients:
  • 0.75 teaspoon onion powder
  • 0.75 teaspoon garlic powder
  • 0.75 teaspoon smoked paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1.25 pounds pork tenderloin
  • 8 slices center-cut bacon
  • 0.25 cup fig preserves
  • 2 tablespoons balsamic glaze
Instructions:
  • In a small bowl, mix onion powder, garlic powder, smoked paprika, salt, and pepper. Massage the spice blend onto the pork tenderloin and allow it to rest at room temperature for 20 to 25 minutes.
  • Preheat the oven to a toasty 400 degrees F (200 degrees C), then line a baking sheet with aluminum foil and give it a quick spray of cooking spray.
  • Arrange bacon slices on a tidy work surface, slightly overlapping them. Spread fig preserves on one side of the bacon. Roll the pork tenderloin in the bacon slices, ensuring it's fully wrapped. Transfer the rolled tenderloin onto the baking sheet with the seam side facing down.
  • Roast the pork tenderloin in the preheated oven for 15 minutes, then take it out.
  • Position an oven rack approximately 6 inches below the broiler and preheat the broiler in the oven.
  • Glaze the pork with balsamic and broil until slightly pink in the center, about 5 to 7 minutes. Ensure the pork reaches 145°F (63°C) when checked with a thermometer. Rest for 5 minutes before slicing and serving.
