Jalapeno popper-inspired bacon-wrapped pork tenderloin with cream cheese stuffing.
Ingredients:
  • 0.5 tablespoon chile powder
  • 0.5 tablespoon garlic powder
  • 0.25 tablespoon white sugar
  • 0.25 teaspoon ground black pepper
  • 1 pound pork tenderloin
  • 3 fresh jalapeno peppers, halved lengthwise and seeded
  • 1 dash ground cumin
  • 0.5 (8 ounce) package cream cheese, softened
  • 4 slices bacon
  • kitchen twine
Instructions:
  • In a bowl, blend chile powder, garlic powder, sugar, salt, and pepper. Create a lengthwise pocket in the pork tenderloin. Rub the spice mixture all over the tenderloin.
  • Preheat your oven to 400°F (200°C) and grease a roasting pan with a light touch.
  • In a skillet over medium heat, warm olive oil. Cook jalapenos until tender, flipping occasionally, for 7 to 10 minutes. Sprinkle with cumin, then cool until easy to handle before chopping.
  • Spread a luscious layer of cream cheese inside the pork tenderloin, then sprinkle with chopped jalapenos. Wrap the tenderloin with bacon slices in a mouthwatering spiral pattern and secure it tightly with kitchen twine to seal in all the flavors.
  • Place the tenderloin in the skillet over medium heat, rotating continuously until golden on each side for about 30 seconds. Then, transfer it to the prepared roasting pan.
  • Roast until a thermometer reads at least 150°F (65°C), about 30-35 minutes. Take out of the oven, cover with foil, and let it rest for 10 minutes. Remove twine, slice, and serve topped with any overflowing stuffing.
