Jalapeño Popper Grilled Cheese Sandwich

Spicy jalapeño popper grilled cheese - a flavor explosion of gooey, crispy, and spicy goodness.
Ingredients:
  • 6 strips bacon
  • 6 tablespoons garlic and herb cream cheese, softened
  • 2 ounces freshly grated Cheddar cheese
  • 2 ounces freshly grated Monterrey Jack
  • 2 to 4 tablespoons pickled jalapeños, finely chopped, or to taste
  • 1/2 teaspoon cumin, optional
  • 4 slices sourdough bread
  • 1 to 2 tablespoons butter
  • 2 tablespoons finely grated Parmesan, optional
Instructions:
  • Fry the bacon in a non-stick skillet over medium heat until crispy, turning occasionally. Drain on a paper towel-lined plate.
  • Prepare the filling: Combine cream cheese, Cheddar, Monterrey Jack, chopped jalapeños, and cumin (if using) in a small bowl. Mix thoroughly. Add the chopped bacon once it has cooled slightly.
  • Prepare the sandwiches: Spread butter on one side of each bread slice and arrange them on a plate with the buttered side facing down. Place the filling on 2 bread slices and cover with the remaining slices to create 2 sandwiches, ensuring the buttered sides are on the outside.
  • Enhance the sandwiches: Remove bacon fat from the skillet and wipe clean with a dry paper towel. Heat skillet over medium heat. Optionally, add Parmesan cheese on top of the sandwiches. Place sandwiches, Parmesan side down, in the hot skillet. Sprinkle more Parmesan on top and cook without cover until golden brown. Flip and continue cooking until both sides are golden.
  • Enjoy: Take off the heat and cool for a few minutes. Slice with a serrated knife and serve immediately. For the freshest grilled cheese, serve straight from the pan. The filling can be prepared in advance by refrigerating in a covered bowl for up to 3 days. Remember to bring it to room temperature before use.
