Jamaican jerk spiced bacon-wrapped pork tenderloin with onion, ready in under an hour.
Ingredients:
  • 2 tablespoons brown sugar
  • 2 tablespoons Jamaican jerk seasoning
  • 1 teaspoon ground paprika
  • 1 teaspoon ground thyme
  • 0.5 teaspoon dried oregano
  • 0.5 teaspoon seafood seasoning (such as Old Bay®)
  • 1 pinch crushed red pepper, or to taste
  • 1 (1 1/2 pound) pork tenderloin
  • 4 slices bacon, or more to taste
  • 1 tablespoon olive oil, or more as needed
  • 0.5 medium sweet onion, diced
Instructions:
  • Preheat the oven to 375°F (190°C) to ensure the perfect cooking temperature.
  • Mix together brown sugar, jerk seasoning, paprika, thyme, oregano, seafood seasoning, and crushed red pepper in a bowl. Massage the seasoning blend liberally onto the tenderloin. Wrap the loin with bacon strips and secure with toothpicks. Drizzle lightly with oil and transfer to a loaf pan or casserole dish. Sprinkle any leftover spice mix on top, add diced onions on top, and scatter the rest around the loin.
  • Roast in the oven, uncovered, until the pork is slightly pink in the center, for 45 to 60 minutes, or until an instant-read thermometer shows at least 145 degrees F (63 degrees C).
