Bacon Wrapped Barbeque Shrimp

Bacon-wrapped shrimp, seasoned and broiled to perfection.
Ingredients:
  • 16 large shrimp, peeled and deveined
  • 8 slices bacon
  • barbeque seasoning, to taste
Instructions:
  • Wrap large shrimp with a half slice of bacon and secure with a toothpick. Ensure to use large shrimp for even cooking time with the bacon. If using medium-sized shrimp, consider pre-cooking the bacon slightly to avoid overcooked, tough shrimp.
  • Preheat the oven to a sizzling 450 degrees F (230 degrees C).
  • Cover a jelly roll pan with extra heavy duty foil and place a baking rack in it. Arrange the shrimp on the rack and generously sprinkle with barbecue seasoning on both sides. Let it sit for 15 minutes to allow the flavors to infuse and the bacon to slightly cook and absorb the seasoning.
  • Bake until the bacon is crisp and the shrimp are tender, typically 10 to 15 minutes. The rack prevents the shrimp from soaking in the bacon fat. Hopefully, you won't rip the foil - just discard it and clean the rack.
