Bacon-Wrapped Barbecue Pork Tenderloin

Impressive bacon-wrapped pork tenderloin glazed in smoky-sweet BBQ sauce. Easy and quick to make.
Ingredients:
  • 8 slices bacon
  • 2 pork tenderloins (about 1 lb each)
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/3 cup Annie's™ Naturals organic sweet & spicy BBQ sauce
  • 1 tablespoon finely chopped chipotle chile in adobo sauce
  • 1/4 teaspoon ground cumin
Instructions:
  • Preheat your oven to 425°F. Cover a 15x10x1-inch pan with heavy-duty foil and generously coat with cooking spray.
  • Place bacon between layers of paper towels on a microwavable plate and microwave for 3 to 4 minutes, or until edges begin to brown but are still soft. Divide each piece in half crosswise.
  • Season the tenderloins generously with salt and pepper, then place them in a pan. Lay the bacon slices diagonally on top of the pork, gently pressing them over the sides for full coverage.
  • Combine barbecue sauce, chipotle chile, and cumin in a small bowl. Brush the glaze on top of each tenderloin. Bake for 30 to 35 minutes until the internal temperature reaches 145°F. Allow the tenderloins to rest for 10 minutes before slicing.
