Curry and lemon roasted cauliflower - tender, golden, and crispy with bold flavor.
Ingredients:
  • 3 tablespoons olive oil
  • 1 tablespoon yellow curry powder
  • 1 tablespoon lemon juice
  • 0.5 teaspoon ground black pepper
  • 1 pound cauliflower florets, cut into 1/2-inch slices
Instructions:
  • Preheat the oven to a toasty 400 degrees F (200 degrees C) and cover a baking sheet with shiny aluminum foil.
  • In a bowl, mix together olive oil, curry powder, lemon juice, salt, and pepper. Add cauliflower and toss to coat evenly. Spread the coated cauliflower in a single layer on the baking sheet.
  • Bake until golden and crispy in the preheated oven, approximately 25 minutes.
