Flavorful Greek salmon and broccoli baked on one pan with honey mustard and feta.
Ingredients:
  • 1 bunch broccoli, cut in large florets
  • 3/4 teaspoons kosher salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon garlic powder
  • 4 (6-ounce) filets salmon
  • 1 tablespoon Dijon mustard
  • 2 tablespoons honey
  • 2 teaspoons balsamic vinegar
  • 2 teaspoons Greek seasoning
  • 1 lemon, cut in wedges
  • 1/4 cup crumbled feta cheese
Instructions:
  • Preheat your oven to a sizzling 450 degrees F (230 degrees C) and prepare a baking sheet with parchment paper.
  • Place broccoli on the baking sheet and generously coat with olive oil, salt, pepper, and garlic powder. Toss to ensure even seasoning, then arrange in a single layer. Make room for salmon fillets among the broccoli and nestle each fillet into its own space.
  • Mix Dijon mustard, honey, and balsamic vinegar in a small bowl until combined. Spread the mustard mixture over each salmon piece and evenly sprinkle with Greek seasoning.
  • Cook the fish in the preheated oven until it easily flakes with a fork, around 12 minutes, or until cooked to your liking. Once done, take it out of the oven and generously squeeze fresh lemon juice over it, then sprinkle with crumbled feta cheese.
