Delicious one-pan vegan dinner with roasted cauliflower, garbanzo beans, tomatoes, lime, and cilantro for two.
Ingredients:
  • cooking spray
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 4 cups sliced cauliflower
  • 2 cups cherry tomatoes
  • 1 (15 ounce) can garbanzo beans, drained
  • 1 lime, cut into wedges
  • 1 tablespoon chopped fresh cilantro
Instructions:
  • Preheat your oven to a toasty 450 degrees F (230 degrees C), then generously line a baking sheet with shiny aluminum foil and give it a quick spray of cooking oil.
  • In a bowl, mix olive oil, garlic, salt, and pepper. Add cauliflower, tomatoes, and garbanzo beans; toss until evenly coated. Spread out on a baking sheet. Include lime wedges for added zing.
  • Roast in the preheated oven for 25 minutes or until vegetables are caramelized. Garnish with fresh cilantro after removing lime wedges.
