Sweet potato crisps with chilli-lime salt

Make crispy sweet potato slices for a delicious and simple snack.
Ingredients:
  • Vegetable oil, for shallow frying
  • 250g orange sweet potato, unpeeled, very thinly sliced (see tip)
  • 250g white sweet potato, unpeeled, very thinly sliced
  • 250g purple sweet potato, unpeeled, very thinly sliced
  • 4.80 gm sea salt
  • 1/2 tsp chilli powder
  • 1 tsp finely grated lime rind
Instructions:
  • Heat oil in a large frying pan over medium-high heat until a small piece of bread sizzles when dropped in. Fry potato slices in batches for 1 to 2 minutes, until golden and crisp. Drain and cool on a wire rack.
  • In a bowl, mix the salt, chili powder, and lime rind. Sprinkle the crisps with the salt mixture right before serving.
