Chicken schnitzel with spicy wedges

Try a mouthwatering dish of crispy oven-baked chicken schnitzel paired with zesty lime, sweet chili, and spicy wedges - a family favorite!
Ingredients:
  • 4 x 200g scrubbed large potatoes, cut lengthways into 8 wedges
  • 200g punnet grape tomatoes
  • 57.50 gm rice bran oil or vegetable oil
  • 175g green beans, trimmed and steamed to serve
  • Olive oil spray
  • Cajun seasoning, to sprinkle
  • 4 chicken crumbed schnitzels
  • Pitted kalamata olives halved (optional)
Instructions:
  • Preheat the oven to 200°C or 180°C fan. Lightly oil a large oven tray. Spread out the potatoes on the tray, spray with oil, sprinkle with Cajun seasoning, and bake for 40 minutes until crispy and golden brown. In the final 10 minutes of the potatoes' cooking time, place the tomatoes on a smaller tray and bake until softened.
  • In a non-stick frying pan, heat the oil and sear schnitzel in 2 batches for 3 minutes per side until golden brown and fully cooked. Place cooked schnitzel on paper towels to drain.
  • Place a generous amount of roasted tomatoes on top of the schnitzel, adding olives to the tomatoes if desired. Serve alongside spicy wedges and beans for a delicious meal.
