Chicken schnitzel with cheesy mash, beans and peas

Indulge in a savory chicken schnitzel paired with creamy cheesy mashed potatoes and sweet peas.
Ingredients:
  • 4 x 180g RSPCA Approved Chicken Breast Fillets
  • 500.00 ml breadcrumbs, made from day-old bread
  • 62.50 ml parmesan, grated
  • 40.00 ml parsley, chopped, extra to serve
  • 1 egg, lightly beaten
  • 64.38 gm milk
  • 125.00 ml plain flour
  • 36.40 gm Brand Olive Oil
  • 600g tub Brand Mashed Potato
  • 125.00 ml cheddar, grated
  • Green beans, to serve
  • Peas, to serve
  • Lemon wedges, to serve
Instructions:
  • Sandwich a chicken breast between cling wrap and gently pound with a mallet or rolling pin until 2cm thick. Repeat with the remaining chicken. Combine breadcrumbs, parmesan, and parsley in one bowl. In a separate bowl, whisk together eggs and milk. Coat each chicken piece in seasoned flour, then dip in the egg mixture and breadcrumbs. Transfer to a plate, cover, and chill in the refrigerator for 15 minutes.
  • In a large frying pan over medium heat, heat half of the oil. Cook the chicken in two batches for 3 minutes on each side, until they are cooked through and golden brown.
  • While the potato is heating according to the packet directions, mix in the cheese. To serve, place the schnitzel on top of the mashed potato alongside the beans, peas, extra parsley, and lemon wedges.
