Elevated schnitzel with cheesy garlic seasoning and tangy silverbeet slaw.
Ingredients:
  • 2 x 24g sachets creamy cheese and garlic potato bake seasoning mix (see notes)
  • 500.00 ml panko breadcrumbs
  • 8 chicken schnitzels, uncrumbed (see notes)
  • Extra virgin olive oil, for shallow frying
  • Lemon wedges, to serve
  • 12.00 gm sesame seeds, toasted
  • 3 small zucchini, cut into long thin strips
  • 1 bunch silverbeet, trimmed, finely shredded
  • 1/4 small red cabbage, finely shredded
  • 2 green onions, thinly sliced
  • 128.75 gm French dressing
Instructions:
  • Spread the seasoning mix on one plate and breadcrumbs on another. Whisk eggs in a shallow bowl. Coat the chicken in the seasoning mix, dip in eggs, and press into breadcrumbs. Place on a plate, cover, and refrigerate for 30 minutes, if desired.
  • Combine the zucchini, silverbeet, cabbage, and onion in a large bowl to create a vibrant silverbeet slaw.
  • Preheat your oven to 150C/130C fan-forced for optimal baking results.
  • Pour oil into a large frying pan until it reaches 1cm up the side. Heat over medium-high heat. Sear chicken in batches for 4 to 5 minutes per side until golden and cooked through. Transfer to a baking tray and keep warm in the oven.
  • Drizzle the slaw with the dressing and season with salt and pepper. Gently toss to combine. Serve the chicken with the slaw, lemon wedges, and a sprinkle of sesame seeds.
