French onion cottage pie recipe

Elevate beef mince dinner with French onion soup mix for rich flavor, topped with cheesy mashed potatoes. Easy and delicious!
Ingredients:
  • 1.2kg sebago (brushed) potatoes, peeled, cut into 4cm pieces
  • 60g butter, chopped
  • 60ml (1/4 cup) milk, warmed
  • 750g beef mince
  • 1 carrot, peeled, coarsely grated
  • 40.00 ml plain flour
  • 44.40 gm tomato paste
  • 40g packet French onion soup mix
  • 120g (3/4 cup) frozen peas
  • 80g (1 cup) coarsely grated cheddar
Instructions:
  • Preheat oven to 200C/180C fan forced. Boil the potatoes in a saucepan for 15 minutes until tender. Drain well and return to the pan. Cook over medium heat for 1 minute until excess liquid evaporates. Remove from heat.
  • Mash the potatoes with butter and milk until smooth. Stir with a wooden spoon until well combined. Season to taste.
  • - Heat oil in a large, deep frying pan over medium-high heat. Brown the mince for 5 minutes, breaking up any lumps with a wooden spoon. - Lower the heat to medium, add the carrot, and cook for 3 minutes until softened. - Stir in flour and tomato paste and cook for 1 minute until combined.
  • Combine soup mix with 375ml (1 1/2 cups) water and cook until thickened, about 5 minutes. Gently fold in peas. Transfer mixture to a 1.75L (7 cup) baking dish. Spread mashed potatoes over the top and sprinkle with cheese.
  • Spread the dish evenly on a baking tray and bake until it turns a beautiful golden brown. Serve hot.
