French onion soup with Swiss cheese croutons

Elevate onion soup with savory cheesy toast.
Ingredients:
  • 18.20 gm olive oil
  • 50g butter
  • 1kg brown onions, thinly sliced
  • 4.00 gm brown sugar
  • 40.00 ml plain flour
  • 1L (4 cups) beef style liquid stock
  • 125ml (1/2 cup) dry white wine
  • 2 bread rolls, cut into 1cm-thick slices
  • 2 slices Swiss cheese
Instructions:
  • In a large saucepan over medium heat, heat oil and butter. Saute the onion for 10 minutes until soft. Stir in brown sugar and cook for 3-4 minutes until sugar dissolves and onion turns golden.
  • Stir in the flour and cook until foamy for 1-2 minutes. Remove from the heat and slowly whisk in the stock and wine until well combined.
  • Sauté the onion mixture over medium heat, stirring constantly, until slightly thickened. Simmer covered, stirring occasionally, until thickened, about 5 minutes. Season with salt and pepper to taste.
  • Preheat the grill to medium heat. Arrange bread slices on a baking tray and toast under the grill for 2-3 minutes on each side until golden. Cut the cheese into pieces and distribute evenly over the bread slices. Return to the grill and cook for another 2-3 minutes, or until the cheese is melted and bubbly.
  • Divide the soup into bowls. Garnish each serving with 2 Swiss cheese croutons, sprinkle with pepper, and serve promptly with extra croutons on the side.
