Indulgent skillet eggs with caramelized onions, savory beef broth, crunchy croutons, and melty Swiss cheese for a delicious twist on classic French onion soup.
Ingredients:
  • 2 medium onions, cut into 1/4-inch slices (2 cups)
  • 1 cup Progresso™ beef flavored broth (from 32-oz carton)
  • 8 eggs
  • 1/2 cup milk
  • 1/4 teaspoon pepper
  • 3 cups cubed (1/2-inch) French baguette or other firm-textured bread
  • 1 cup shredded Swiss cheese (4 oz)
Instructions:
  • In a 12-inch cast-iron skillet, melt 2 tablespoons of butter over medium-high heat. Sauté onions for 5 to 7 minutes until they start to brown. Reduce heat to medium and continue cooking for 10 to 12 minutes until onions are fully browned. Increase heat to high, pour in broth, and cook for 5 to 7 minutes until onions are dark brown and liquid has evaporated. Transfer onions to a bowl.
  • In a medium bowl, whisk together eggs, milk, salt, and pepper until fully combined. Preheat oven to broil setting.
  • Pat dry skillet with paper towels. Melt the remaining 2 tablespoons of butter in the skillet over medium heat. Toss in bread cubes until coated and cook for 3 to 4 minutes until lightly browned, stirring occasionally. Lower the heat and gently pour in the egg mixture over the bread cubes. Cook undisturbed for 5 to 8 minutes until the eggs are set on the bottom but slightly runny on top. Top with onions and sprinkle with cheese.
  • Broil 6 inches from heat until set and cheese is melted, about 3 to 5 minutes.
