French onion beef with noodles recipe

Slow-cooked beef and noodles in savory French-onion broth, a family favorite.
Ingredients:
  • 25g butter
  • 36.40 gm extra virgin olive oil
  • 2 large brown onions, cut into thin wedges
  • 2 sprigs fresh thyme
  • 500g piece beef chuck steak, trimmed
  • 125.00 gm dry white wine
  • 510.00 gm Beef Style Liquid Stock
  • 2 dried bay leaves
  • 8.00 gm brown sugar
  • 150g snow peas, trimmed, halved diagonally
  • 400g packet fresh thin egg noodles
  • Fresh coriander sprigs, to serve
Instructions:
  • In a large, deep frying pan over medium heat, combine oil and butter. Add onion and cook for 10 to 12 minutes, stirring occasionally, until softened without browning.
  • Enhance the flavors by adding garlic and thyme. Sauté for 1 minute until fragrant, stirring occasionally. Push the onion to the side of the pan and turn up the heat to medium-high. Add the beef and sear for 5 minutes on each side until nicely browned.
  • Pour in the wine and let it simmer briefly for 30 seconds. Add the stock, 3 cups of water, and bay leaves. Season generously with salt and pepper. Cover the pot and bring to a boil. Reduce the heat to low and simmer gently for 3 hours, making sure to turn the beef halfway through, until it's beautifully tender.
  • Gently shred beef on a cutting board and return to the pan. Stir in sugar and let simmer for 10 minutes. Add snow peas and simmer for an additional 5 minutes until vibrant green and tender.
  • Place the noodles in individual serving bowls. Spoon the beef mixture over the noodles. Garnish with fresh coriander and green onion. Enjoy while hot.
